Easy Protein Breakfast Recipes

I love a good breakfast, but like many of us, I get stuck in a rut. 

 

Summer consists of muesli, yoghurt and berries.  

 

Winter consists of cinnamon porridge with apple.

 

Pretty boring right?  The reason I stick to the same breakfast, like most of us I'd imagine, is that it's easy to make and I don't have to think about it.  

 

So I have spent the last few weeks, on my days off, figuring out what could be just as quick but more fulfilling, and no it wasn't brunch.

 

What consists of a good breakfast? 

 

Well, while the cereal companies will have you think that you need lots of carbohydrates to get you going.  You actually need a good helping of another macro nutrient too.

 

Protein  

 

Protein has been shown to reduce sugar crashes and increase satiety after meals.  

 

Adding protein to your meals, is key to keeping the 10am & 3pm pantry raids at bay (read that again for me).

 

How do we start out day right, when most of us are short on time?  When many of us stick with the simple bowl of cereal of toast and some of us skip breakfast altogether.

 

Here are 5 recipes to help you get going.  Some of which you can prepare the night before

1. Huevos Rancheros

 

I am in love with this recipe from deliciousmagazine.co.uk!  Although I can only make it when avocado's are in season *sad face*. 

 

You can use shop bought guacamole, but it just isn't the same!  You can also use gluten free wraps to keep it Paleo ish.

 

However, it's a yummy recipe and you can prepare the salsa and the guacamole the night before.  

 

Maybe practice making it on a day when you're not in a rush to get the hang of it.  mm. mmmm. mmmmmmmm  I'm going to make some tonight!

 

 

2. Clever Guts Chia Pudding

 

For a super duper easy breakfast that is nutritious and quick to grab, you can't go wrong with a Chia Pudding.

 

I've tried a few different chia puddings in my time and I never really got it right until I received the Clever Guts book for Christmas.  The secret?  Vanilla.  

 

 

3. Protein Pancakes

 

My life changed when I discovered protein pancakes.   It was probably the first thing I tried when I started eating Paleo 5 years ago.

 

Sometimes simply adding a banana and an egg together can result in a gooey mess.  This is why this Nuzest recipe works.  The protein powder adds an extra binding agent to the meal.  Plus it keeps you going for longer.

4. Strawberry Banana Smoothie

 

This is my own recipe.  It's super easy to make and is my go to quick breakfast that I can drink in the car.

5. Scrambled Eggs & Smoked Salmon

 

This is another one of my household favourites.  Courtesy of my hubby. 

 

He finally taught me how to make scrambled eggs and I can't believe how simple it was!

 

It was my go to breakfast (along with the smoothie above) when I was recovering from having my 4 wisdom teeth removed.  

 

Ingredients (serves 1)

 

2 Large Eggs

1/2 Avocado

50g Smoked Salmon (sliced or whole, your choice)

2 Slices of bread (optional)

 

Method

 

  • If you're having toast, put the bread in the toaster now.

  • Crack the eggs into a bowl and whisk

  • Pour egg mixture into a non stick pan on a low heat.    (use a little olive oil or butter if you don't have a non stick pan)

  • Using a wooden spoon, keep stirring the eggs until it's almost set. 

  • Remove from the heat

  • Slice the avocado
  • Chop or shred the smoked salmon and mix in with the egg
  • Place scrambled eggs on top of toast and top with sliced avocado.
