5 Yummy Salad Recipes

If I had a dollar for the amount of times I've heard people say that they don't like salad, I'd be retired & not sitting here writing this blog!

Salad isn't a flavourless combination of iceberg lettuce, tomato and cucumber. I actually pretty sure that, with the variety of yummy fruits, vegetables, nuts, seeds & pulses available to us, we could quite easily create a different salad for every day of the year.

We are only limited by our imagination!

Now, if you're not used to eating salads, your imagination may be failing you right now. So I have done you a favour and collated my 5 favourite salad recipes from around the world.

1. Greek Salad

This instantly makes me feel like I'm on holiday and the dressing is amazing! I'd definitely invest in the right ingredients as substitutes just don't do it justice.

You can get away with just olive oil and balsamic, but really, why would you?

 

2. Mexican Bean Salad

Beans are high in protein and as we all know, protein is key for helping us stay fuller for longer. Which is especially good if you're trying to eat less.

What I love about this recipe is that you don't have to use avocado. So if it's not in season, the meal will still taste great without it! When it is avocado season, make some guacamole or just dice it and toss it through for a little extra something something.

 

3. Roast Vegetable Winter Salad

This is my own recipe that I generally just wing in the winter with whatever vegetables I have to hand. Here is a recipe for my favourite combination of wintery yummy goodness.

4. Coleslaw

You can't have a salad list without coleslaw, and I've seen some grotty, snotty coleslaw!

I never liked it until I met my fiance. He basically bought a bag of coleslaw from the supermarket and mixed a touch of aioli and grated cheddar through it. No more sloppy coleslaw for me!

5. Beetroot, Orange, Pomegranate and Quinoa Salad

Just typing out the title of this recipe is making my mouth water. It's something about those little pomegranate gems that just fill me with joy!
