I have been a chicken soup fan since forever! It is my go to in the winter when I'm feeling like something cosy and comforting. However, the recipe that I used to use was a little low on the vegetable front.
Cue the clever guts diet and their Happy Guts Chicken Soup recipe!
There are so many vegetables in here that it really will cure what ails you!
1 White Onion, Chopped
2 Tbsp Olive Oil
1 Small Garlic Clove, Chopped
2 Large Boneless Chicken Thighs, Diced
700 ml Water
1 tsp Root Ginger, Chopped
Juice 1 Lime
1 Red & 1 Yellow Capsicum, De-seeded & Chopped
1 Head of Broccoli, Chopped
1 tsp Fresh Thyme, Chopped
Handful of Fresh Coriander & Parsley, Chopped
2 tsp Chives, Chopped
In a large pan, gently sweat the onion and garlic with the chicken in the olive oil until everything is golden.
Add the rest of the ingredients, apart from the fresh herbs, and simmer on a low heat for 60-90 minutes, or until the vegetables are soft and the flavours have blended.
Season generously with salt and freshly ground black pepper.
Add the fresh herbs a few minutes before serving.
I like to blend the soup until nice and smooth, but you're welcome to keep it as a broth with chunks in. Personal preference wins with this one.
